5 gallons   OG 1.052   IBU 20




Fermentables:
    4.5 lb. Wheat malt
    2.5 lb. British Pale malt
    3.5 lb. German Pils malt

Hop Bill:
    .6 oz Mount Hood @ 60 mins, 5.1 AA pellets.
    .5 oz Saaz @ 60 mins, 3.6 AA pellets.
    .13 oz Saaz @ 2 mins, 3.5 AA whole.

Other specifics:
    Wyeast 1098 British ale yeast
    6 grams calcium chloride in mash

Procedure:
Mash at 149 for 120 minutes. Mash out at 165 for 20 minutes. Carbonate this beer well, it needs to be a spritzy beer.

I call this Truly American because it uses a melting pot of ingredients. This is the recipe that I used when I won BOS at Schleswig in 2002. It was at it's peak and very nicely balanced for such a light beer. I also made it this last Summer (2003) using Wyeast 1056 for a back yard party, in which I made three other beers for the event. This wheat had the emptiest keg at the end of the day. It stands up well in the Bud crowd.
